Baking with Ancient Grains

What is an ancient grain, and what makes them different from modern wheat? Together we will go over the many benefits and unique qualities of ancient grains, including Emmer, Kamut, Spelt, and Einkorn. We’ll delve into a bit of their histories, clear up some common misconceptions, explore how to source these locally-grown grains, and of course, how to bake with them!

Bread Art: Scoring

“Scoring” the surface of bread prior to baking gives a more artisan look, but also has important functions for making the final loaf. Though difficult to practice, and even more so to master, we’ll help prepare you to make scoring the most fun part of the baking process. Topics/demos will include a brief history of scoring loaves, scoring functions in bread baking, recommended tools (both makeshift and purchased), and techniques of different scoring styles. 

Bread Art: Shapes, Dyes, and Stencils

Simple techniques such as shaping, use of natural dyes, and stenciling can give the final appearance of your bread a more artisan and creative look. This workshop will teach participants how to master these techniques, and will go through the different tools (both makeshift and purchased) necessary for a beautiful final product.

Owner, founder, and head baker Chloe Newman recently completed a Winter 2020 residency with Chatham University’s Center for Regional Agriculture, Food, and Transformation (CRAFT). As part of her residency, Chloe continued to teach a variety of public workshops, as well as develop new ones to offer in the future.
